Hot Honey Chipotle Chicken Tacos

We adore these hot honey chipotle chicken tacos! The chicken is the perfect blend of sweet and spicy, served on warm tortillas and topped with a refreshing avocado salsa. The combo is delicious!

These hot honey chipotle chicken tacos make it into our weekly menu at least once a month. It’s simple to prepare the chicken ahead of time and throwing together a refreshing, cooling avocado salsa is easy too. The combo goes so well together that it leaves everyone asking for seconds. 

And I can never turn down a taco!

I’m thankful that tacos are now in my kids’ top three favorite meals too. Truly, I have no idea how I’d go on if they weren’t. 

I’ve made a variety of honey chipotle chicken dishes over the years, but I never stick the flavor in my tacos. Unless I’m finding leftovers that have been stashed in the fridge and then making a quick skillet-toasty quesadilla.

The flavor is always top notch because of the sweet heat combination. It’s a little spicy, a little sweet and a little smoky. Nothing that I can’t handle heat-wise, since I am a giant baby. There is just enough bite to make the chicken interesting and taste really darn good. 

Plus, I grill the chicken which adds a whole other element of flavor! I find that it’s nearly impossible to dry chicken out on the grill, as long as you know your grill. I have my grilling down to the minute and I know exactly how long to cook the chicken. It comes out perfect every time. It’s also less messy in my actual kitchen, which is always a bonus.

Here’s how it comes together!

Spoiler alert: it’s fast.

I season the chicken with chipotle chili powder, some salt and pepper, garlic and drizzle on a bit of hot honey. I love how this gets caramely when grilled! The chicken only takes about 1o to 12 minutes total, then I like to let it rest for another 10. 

In those 10 minutes, you can find me making the avocado salsa. This is embarrassingly easy and so flavorful. Avocado chunks, diced red onion and jalapeno, lots of lime and cilantro. Simple but classic and tastes fab. It’s one of those flavors that I actually crave. Like guacamole, just not mashed.

I grab a little bit of crumbled cotija cheese or queso fresco to crumble on top. Then everything gets thrown in a tortilla and devoured.

Corn or flour tortillas work – honestly I just usually grab what is in my fridge! I love corn tortillas, the kids love flour tortillas. I’m not sure if Eddie even notices the difference, haha.

You can take the same combo and make it into a quick quesadilla or even one of my crispy baked quesadillas. Or even throw the chicken and avocado salsa over some rice. Scoop it up with chips, of course!

This mix of warm and spicy sweet chicken mixed with cool creamy avocado is just a dream.

Hot Honey Chipotle Chicken Tacos

We adore these hot honey chipotle chicken tacos! The chicken is the perfect blend of sweet and spicy, served on warm tortillas and topped with a refreshing avocado salsa. The combo is delicious!

  • Preheat your grill to high and let it heat for 10 minutes.

  • Place the chicken on a plate. Season the chicken all over with the chipotle chili powder, a sprinkle of salt and pepper and garlic powder. Drizzle with the olive oil and hot honey and turn over a few times to make sure it’s fully coated.

  • Place the chicken on the grill. Grill with the lid closed for 5 to 6 minutes. Flip and then grill for another 5 to 6 minutes, or until the internal temperature reaches 165 degrees F. Remove the chicken from the grill and let it rest for 10 minutes. After 10 minutes, chop it up. Add on another drizzle of hot honey if you wish!

  • In a bowl, combine the avocado with the peppers, onions, cilantro and lime juice. Add a pinch of salt and pepper and toss well.

  • Warm the tortillas. Serve the chicken on the tortillas. Top with the avocado salsa and a sprinkling of cheese. Serve!
